These delightful pancakes will thrill your taste buds and energize your body! Packed with protein and goodness.
Mash banana in a bowl (I use a potato masher). Add egg and egg whites – continue mashing until well mixed (will be a bit lumpy). Heat griddle. Spray griddle with GF olive oil non-stick spray (better for you that the canola oil spray). Scoop batter onto hot griddle – a bit less than 1/4 cup per pancake. Add nuts or flax meal at this point if you like. Check the underside but lifting edge with a spatula sprayed with olive oil. When underside is golden, quickly slide pancake flipper under the pancake and flip. Cook until golden. Remove to plate and serve immediately. Instead of syrup, use yogurt or smashed fruit to dip your pancake in or eat with nothing – still tastes great and moist!
